Apple & Fig Breakfast Smoothie
Smoothies are perfect all year round, no matter the season. With the winter blues and classroom germ factor at an astronomical height, I've taken to boosting my immune system with as many sources of vitamins and antioxidants nature has to offer. So far, so good! This smoothie is a simple adaptation of the date and almond smoothie I shared a few months ago and equally as delicious, especially when you're bleary eyed and in need of a pick-me-up.
Servings: 2
Prep+cooking time: less than 5 mins
Ingredients
1/3 cup apples, skin removed and chopped into small chunks
1 fig, scooped out of skin
1/2 cup natural or Greek yogurt
ice cubes
1 tsp honey (optional)
Instructions
1) Chop your fruit with skin removed so it can pass through the blender easily.
2) Add yogurt a tablespoon at a time and give the mix a quick whizz. Keep adding until you get your preferred consistency, add ice cubes and give it another quick blitz. Drizzle honey for added sweetness and drink while it's still fresh.
